Liam Downes is a talented and creative chef born in regional Victoria, whose culinary career is deeply influenced by his roots in the heart of Central Victoria. Based in Wattle Flat, Liam is known for his unwavering commitment to using locally sourced ingredients and showcasing the best of regional produce.

Liam has held the role of Executive Chef at several of Ballarat's renowned venues, including Moon and Mountain, Ragazzone, and Wayward Winery. At Regazzone, he was instrumental in earning a coveted Chef's Hat in 2023, a recognition of his exceptional culinary skills and creativity.

Currently, Liam is the driving force behind Black Cat Truffles by Liam Downes in Wattle Flat, where he focuses on producing and showcasing the finest truffles, incorporating them into his culinary creations while championing the best of local ingredients. His cooking style is a celebration of simplicity, seasonality, and artistry, with each dish reflecting his deep respect for the natural bounty of the Ballarat region.
