Be wowed by new Ballarat restaurant Babae

Ballarat's newest fine dining experience will champion the region's best growers and producers.

The 26-seat Babae will open at Hotel Vera Ballarat on 25 January 2024.

Its name is derived from the Latin meaning of an exclamation of surprise, amazement, wow.

Managed by chef Tim Foster, Babae's menu will feature an ever-changing selection of dishes reflecting the season and sourced from produce grown in the Goldfields region.

Think of a contemporary interpretation of classic cooking techniques.

Wine pairings will match the rotating menu items and introduce diners to barrel samples and small production releases from across Victoria.

"Babae offers an intimate, fine dining experience with a menu that champions the region's growers and producers, augmented by produce from my own 25-acre garden," Tim said.

Most recently at Bendigo's Gold Mines Hotel, Tim also previously worked at Kyneton's Source Dining, achieving a one hat ranking in the Good Food Guide for nine consecutive years.

Babae will be open for dinner Thursday-Saturday, lunch Friday-Sunday, and for breakfast daily for Hotel Vera guests.

The menu will be prix fixe from $90 per person, depending on the sitting.

Located at 710 Sturt Street, Hotel Vera boasts boutique accommodation with carefully-curated interiors, thoughtfully-selected amenities and a commitment to sustainability.
